We are so sorry for our absence; but it has been for a great reason - 3 OAKS is doing great, thanks to you, we are busy busy busy!<br />

As for 3 OAKS STUDIO - we have expanded to offer more convenience to you and are blessed to have a great team to help you when we personally aren't in the shops. <br />
<br />
As for the VINEYARD - as most of you probably already know; with the drought, we are not hosting events for the 2016 season. We have enjoyed our five years of bringing together families but with the lack of plentiful water and time we are not planning any more events. That doesn't mean that we aren't looking toward the future------<br />
<br />
We are thinking about offering an Exclusive Membership Club where the members could come out and enjoy the serenity and beauty of the Vineyard while sipping our wine that we will share with only those members. Drop us a line and tell us if this idea intrigues you!<br />
<br />
As for our WINE - the 2015 vintage is the best yet and is rivaling wines sold in the $40-50/btl range. Each and every one of them shows great structure, flavor, and aromas already, and they are only month old babies. <br />
<br />
As for WINE FOR SALE - we are starting to look for a location in Clovis to hopefully start selling wine with the 2016 vintage, so say a prayer for us.<br />
<br />
We know it has been frustrating for those who enjoy our wines, but it is such an involved and expensive process that we wanted to make sure our wines were top quality before we made the substantial investment. With the 2015, we believe we are there, and we can repeat that quality year after year.<br />

<b><br /><br />Last year's Petit Syrah wine is fruit forward that smoothly ends with a mineral chalkiness expressing the "terrior" (French for the environment the grapes growing within), reminding me of French wine. The initial taste of this years Petit Syrah Zinfandel (PZ Blend) blend is reminiscent of a deep flavored "amarone" Italian style wine.<br />Needless to say, we are looking forward to popping a cork on a bottle of PZ Blend in two years.<br /><br />We now are also enjoying all natural, no preservative, locally & naturally fermented vinegars (Malbec, Cabernet, Grenache) - sooo good.<br /><br />Want to make your own all natural wine or vinegar? The next important task is to get the vines watered and fertilized through the drip irrigation system (known as “fertigation”) <span class="text_exposed_show" style="display: inline;">by the first of February because the roots start growing one month before the vine shoots start in early March.<br /><br />We are also busy bottling the 2010 vintage wine and will be ready to share some with our friends this fall. After 5-6 months in the bottle, the wine should be relaxed and smooth, perfect for sipping while watching a movie in the vines. <span style="font-family: Arial, Helvetica, sans-serif; line-height: 14px;"><i>The wine developed great color and flavor, so all the work pruning the vines this summer paid off. What I have found is that fermenting the grapes for 3 weeks is great to extract the maximum amount of color and flavor, but the grapes have to be of premium quality, which is developed in the vineyard before the grapes are even picked. </i></span><br />
<span style="font-family: Arial, Helvetica, sans-serif; line-height: 14px;"><i><br /></i></span><br />
<span style="font-family: Arial, Helvetica, sans-serif; line-height: 14px;"><i> Interestingly, if the vine branches get over 4 ft long, they start producing more sugar than sending energy to the grapes and thus a herbaceous flavor is apparent in the resultant wine, which in small amounts is ok, but large amounts detract from the grape and oak flavors. </i></span><br />
<span style="font-family: Arial, Helvetica, sans-serif; line-height: 14px;"><i><br /></i></span><br />
<span style="font-family: Arial, Helvetica, sans-serif; line-height: 14px;"><i>Consequently, trimming the vines during the summer to limit the length of the vines actually improves the flavor and color of the grapes and wine. Conversely, too much trimming increases the opportunity for the sun to raisin the grapes, which produces a cooked grape or raisin flavor in the wine. </i></span></div>
